How about building one? You can take an old honda cb350/360 and make a cool bike without a Chinese engine? CCW has had some OK reviews but I shy away from the engines. I've done several builds over the years with old Honda's and Yamaha's. It's fun and much more rewarding but if your not mechanically inclined, buying a complete bike may be better. I would look for a used cafe racer styled bike for 3k.
These are definitely chinese built, but designed, managed and QC'd by an American company (Cleveland Cycleworks)
You can google them and reviews by Hellforleather Magazine which are pretty informative.
I have never ridden one, but they can be had here in South Africa for about US$2500-2800. Quality, fit and finish up close isn't the best I have ever seen, but they're not Honda and at theat price-point it's far better than most other smaller-asian-built-brands imported that we get to see / look at.
