I have been reading a lot of form post on 15/50 gearing and gearing all around. But I am a larger man, 250 lbs, and I would like to be able to travel more comfortable at 55-60 down the high way. What would you recommend be the best gearing for that? Please let me know what you have tried and worked best?

15/50 or 14/47 is generally regarded as the best highway gearing. - and doesn't drastically hinder the bikes off-road capabilities for light/moderate applications.

From experience I can tell you anything taller than 15/50 SUCKS - the bike just isn't powerful enough.

What if I only wanted to change the back sprocket at this point in time? What would you recommend?

Per Dark sol the 47 is the generally accepted rear with a stock front.

The 14/47 combo is what my wife run in our dubs........... Really like it for our riding style ..... 80% / 20% road and off road.. I like that there is less buzz in the handlebars above 55. And first gear is useable now. And for the record. The stock 122 link chain can be used but the 120 link works much better........ OMM.
