I got my bike 2yrs ago, put 1000mi on it, and just realized that there's a bunch of maintenance I have been missing and only just learned that I should have been doing. I only knew about cleaning and oiling chain and adjusting tire pressure within that period. I've already replaced the chain with an o-ring chain because the stock one flew off while riding on a trail immediately after dumping it because I didn't know they needed to be periodically adjusted. I'm hoping that I'm not missing anything, and let me know if any of this is too excessive. I will be doing everything on the list for the age (1yr, 2yr, 4yr, 6yr) because my bike is a 2007 and I don't know the history of what has been replaced, and will be doing the 300mi and 5k intervals.

That is way more than I have ever done! I do things as they need doing except change the oil which I do every 1500 or so miles and clean and lube my non-o-ring chain and sprockets approx. every 400 miles.

Too many potential problems with aftermarket oil filters. Lots of info about that on this forum if you search for it. I'd stick with OEM. You had listed a Wix filter. Just my .02 IMHO.

Too much maintenance is just as bad as too little maintenance!
Here is my schedule:
Every 500 miles: Clean and lube chain and check tension. Clean air filter (NoToil is A1)
Every 1000 miles: Replace engine oil Mobil 1 10w40 Clean oil filter (OEM!!!)
Every 5,000 miles: Check and adjust valves
At 8,000 to 10,000 replace tires and tubes, flush and fill fork oil
At about 15,000 miles: replace chain and both sprockets (depending on dusty conditions and clean/lube schedule

At 45,000 miles: rebuild engine!

That's about it. 😛
